Creamy Iced Pistachio Latte with Pistachio Cold Foam

This is my easy café-style Iced Pistachio Latte made with a double shot of espresso, creamy oat milk, and a slight shmancy pistachio cold foam. Made using pistachio spread with no nasties, you can make this decadent iced coffee in under 5 minutes.

I’ve been shaking up my post-lunch coffees with a homemade Iced Pistachio Latte – it’s the perfect afternoon caffeine kick with an added creamy, nutty, sweet taste of pistachios.

Why I love this Pistachio Latte

There are no nasties. I know I say this in a lot of my recipes…but considering how much other crap I eat, it’s good to have some of these treats that are free from nasties! The Goodstachio Pistachio Spread has no nasties, refined sugars or dairy, so it’s a good solution for a lot of foodies out there. The sweet part comes from a gut-free sweetener called Allulose.

It’s a café-quality drink at home. My layered pistachio cold foam makes this drink look and taste like a $12 specialty coffee from a trendy Sydney café, and it takes less than 5 minutes to whip up.

It’s 100% customisable. You can easily swap the milk to suit your dietary needs, adjust the sweetness, or use decaf espresso if you’re making this in the afternoon.

It’s such a delicious treat. One sip and you’ll be wanting to make it every day – especially when summer comes around in Australia.

Recipe: Creamy Iced Pistachio Latte with Pistachio Cold Foam

Servings: 1 iced drink

Prep time: 5 minutes

Equipment: You’ll need a strong milk frother or a whisk for the cold foam.

Ingredients: What do you need for an Iced Pistachio Latte?

  • 1 double espresso shot – approx. 60ml, fresh and hot (but you can use any coffee – even instant)
  • 2–3 tsp Goodstachio Pistachio Spread (divided: 1–2 tsp for the espresso, 1 tsp for the cold foam, plus a little extra for the glass)
  • 1 cup cold milk of choice (I use creamy oat milk)
  • 1/3 cup heavy/thickened cream (for the whipped cold foam)
  • 1 cup ice cubes

Instructions: How to make an Iced Pistachio Latte step-by-step

  1. Step 1: Melt the pistachio spread into the coffee. Add 1 to 2 teaspoons of Goodstachio Pistachio Spread to a small glass, then pour your fresh, hot double shot of espresso over. Stir vigorously until the spread dissolves into a smooth, glossy pistachio-espresso mix.
  2. Step 2: Whip the pistachio cold foam. In a small glass, whisk the heavy cram and 1-2 tsp of pistachio spread until it’s combined and thick, airy and fluffy. It might take longer if you have a small frother, otherwise you can also whisk it all together in a small bowl first.
  3. Step 3: Prep your serving glass. In a tall glass, generously smear about 1 tbsp of pistachio spread around the inner walls of the glass so you have that aesthetic cafe swirl. Fill the glass with ice cubes.
  4. Step 4: Add your cold milk of choice. Pour 1 cup of cold milk of your choice over the ice, filling about 3/4 of the way up – you’ll need space for your coffee and cream layers!
  5. Step 5: Add your pistachio espresso. Pour your pistachio coffee mix in – and watch the colours swirl.
  6. Step 6: Top with pistachio cold foam. Slowly pour your pistachio cold foam over the drink as the final layer. Add your straw, and enjoy!
