Quick & Easy Smoked Salmon Pizza

When it comes to weekday meals, I’m all for low effort and high reward. This 20-minute Smoked Salmon Pizza is exactly that.

As much as I love making pizza from scratch (where I use a same-day dough recipe), but that’s for when I’ve got time on a weekend. Weekdays are for easy bases from the shops and you’ve got a lot of options like pre-made pizza bases, flatbreads, and even wraps to keep the meal a little lighter.

Why I love this Smoked Salmon Pizza

It’s a fast dinner at home. It takes me about 20 minutes to prepare and cook this pizza so like I said before, it requires low effort and but the result is a high reward!

It’s easy to make without much fuss. The whole point of easy meals is to use whatever you have on hand. The toppings I’ve used on my smoked salmon pizza are things I already had in my fridge and pantry, like avocado, cherry tomatoes, yoghurt, and dried herbs.

It’s healthy-ish. This pizza can be healthy if you want it to be. Salmon and avocado are already healthy stars, and if you want a lighter, healthier meal – just use wraps as a base. If you want it to be deluxe, add more salmon. I swapped the cream cheese for Greek yoghurt that was already in my fridge and I honestly loved it!

It’s fresh and delicious. As much as I love a super cheesy pizza, I love this smoked salmon pizza because it combines a slightly cheesy warm base with fresh smoked salmon, avocado and yoghurt. This would also be great as a quick yet impressive dish for a group, along with some sides.

Greek yoghurt or cream cheese?

When you think of a salmon bagel, smoked salmon and cream cheese go hand in hand. While I love cream cheese, I don’t use it much (if not, at all) at home on a weekly basis. So I subbed the cream cheese for Greek yoghurt and honestly, the yoghurt gives a great slight tang to the pizza. I love the Farmers Union Greek yoghurt, because it’s not too sour.

Recipe: Quick & Easy Smoked Salmon Pizza with Avocado and Greek Yoghurt

Servings: This recipe makes 1 pizza. It can be a snack for 4 people, a healthy meal for 2 people, or a meal for 1 person who is super hungry.

Prep time: 20 minutes (approx. 5-10 minutes of prepping, and 5-10 minutes of cooking).

Ingredients

1 x premade pizza base (I used the Garlic & Herb crust base Homemade Pizza Co, but you can use flatbread or even wraps)

1 x packet of smoked salmon (I love this Regal NZ King Salmon that’s not too salty)

2 tbsp Greek yoghurt

A handful of grated cheese (optional – leave out if you’re keeping it healthier)

1 tbsp flour for dusting baking tray

Fresh toppings are up to you, I used:

1/2 to 1 avocado, cut into slices

A handful of cherry tomatoes, halved

A few red onion slices

Sprinkle of dill (I used dried dill because that’s all I had at home)

Drizzle of olive oil

Salt and pepper

Optional: Juice from 1/4 of a lemon

Instructions

This recipe is more about assembling than cooking.

Step 1: Prep oven and toppings. Preheat the oven to 200-220C. Cut up your avocado, cherry tomatoes, red onion slices and whatever else you’re adding to your pizza.

Step 2: Cook base. Dust your baking tray with some flour. Place your base on a baking tray and spread 2 tbsp of Greek yoghurt. Add cherry tomatoes and cheese. Pop the base into the oven and cook for 5-10 minutes, depending on how you like your base. I cooked mine for just under 10 minutes so the baby cherries are slightly roasted and the cheese has melted.

Step 3: Assemble pizza. Take your pizza base out and add your fresh toppings. I added my avocado as the bottom layer, followed by the smoked salmon, then the smaller toppings like onion slices.

Step 4: Add the finishing touches. Add some final little dollops of greek yoghurt on top. Drizzle some olive oil and lemon juice. Add dill, salt and pepper. That’s it!

My pizza was a smaller one so I cut it into 4 quarters, but if you have a bigger base, you can always do 6-8 pieces.

Tips

Don’t overbake the base. If you’re using a thinner base like a wrap, it’ll cook VERY FAST so keep an eye on it!

Try other herbs. You can add other herbs you might like, including chives and parsley.

Add other toppings. Capers is also a classic addition to anything smoked salmon, so add that if you have it handy. Otherwise, you can also chop up some pickles to sprinkle on top.

Eat it fresh. Since this is a smoked salmon pizza with warm and cold toppings, I recommend eating it straight away. But, I did have one piece that I left overnight that still tasted fine after 20 seconds in the microwave. As long as you don’t overcook the smoked salmon.
